- 1 lb boneless, skinless chicken thighs or breasts, cut into 1½-inch cubes
- 1 cup ranch dressing
- 3 tablespoons grated Parmesan cheese
- 3 cloves fresh garlic, minced
- 2 tablespoons olive oil or melted butter
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
- Wooden or metal skewers
- Optional: cremini or button mushrooms, cherry tomatoes, red onion, bell peppers
Instructions
- Cut chicken into even 1½-inch cubes and season with salt and pepper.
- Combine ranch dressing, Parmesan, garlic, olive oil, and lemon juice to make the marinade.
- Marinate chicken in the mixture for at least 30 minutes, up to 4 hours.
- Prep vegetables; thread chicken and vegetables onto skewers.
- Preheat grill or skillet, oil grates or surface.
- Cook skewers for 3–4 minutes per side until chicken reaches 165°F and vegetables are tender.
- Rest skewers for 5 minutes, then serve with extra Parmesan and fresh herbs.
Notes
Pat chicken dry before marinating for better browning. Soak wooden skewers for 30 minutes to prevent burning.
