These Ranch Garlic Parmesan Chicken Skewers are juicy and flavorful, perfect for weeknight dinners or gatherings. A delightful combination of ranch dressing, garlic, and parmesan elevate simple chicken and vegetables.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into -inch cubes
  • 1 cup ranch dressing
  • 3 tablespoons grated Parmesan cheese
  • 3 cloves fresh garlic, minced
  • 2 tablespoons olive oil or melted butter
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste
  • Wooden or metal skewers
  • Optional: cremini or button mushrooms, cherry tomatoes, red onion, bell peppers

Instructions

  1. Cut chicken into even 1½-inch cubes and season with salt and pepper.
  2. Combine ranch dressing, Parmesan, garlic, olive oil, and lemon juice to make the marinade.
  3. Marinate chicken in the mixture for at least 30 minutes, up to 4 hours.
  4. Prep vegetables; thread chicken and vegetables onto skewers.
  5. Preheat grill or skillet, oil grates or surface.
  6. Cook skewers for 3–4 minutes per side until chicken reaches 165°F and vegetables are tender.
  7. Rest skewers for 5 minutes, then serve with extra Parmesan and fresh herbs.

Notes

Pat chicken dry before marinating for better browning. Soak wooden skewers for 30 minutes to prevent burning.
