- 1 cup active or fresh sourdough discard
- 1 1/2 to 2 cups all-purpose flour (plus extra for dusting)
- 1/2 teaspoon fine salt
- 1 tablespoon olive oil or melted butter
- 1/2 cup warm water (adjusted as needed)
- Butter or neutral oil for skillet cooking
Instructions
- In a mixing bowl, combine sourdough discard and salt. Add olive oil or melted butter, and mix until incorporated.
- Gradually add 1 1/2 cups of flour, stirring with a wooden spoon. Add warm water as needed until dough comes together in a soft, slightly tacky ball.
- Turn the dough onto a floured surface and knead for 2–3 minutes until smooth. Cover and let rest for 10–15 minutes.
- Divide the dough into 8 equal pieces and shape each into a ball. Keep unused balls under a damp towel.
- Roll each ball into a thin circle (6–8 inches in diameter).
- Heat a cast-iron skillet over medium-high heat and cook each tortilla for 30–45 seconds on each side until small bubbles appear and browned.
- Brush with melted butter if desired and keep warm in a clean towel.
Notes
Letting the dough rest is crucial to avoid spring back when rolling. For best results, use a hot skillet.
