  • Author: Marlene Quinn
  • Total Time: 20 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A vibrant and flavorful berry sauce perfect for drizzling over pancakes, yogurt, and more.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled and quartered
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1/2 cup granulated sugar (or honey/maple syrup)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Wash and Prepare the Berries: Rinse your berries under cold water and pat them dry gently. For strawberries, hull them and slice into quarters.
  2. Heat the Berries: In a medium saucepan over medium heat, combine the berries, sugar, and lemon juice. Stir gently to combine.
  3. Simmer: Allow the mixture to simmer for about 10–15 minutes, stirring occasionally.
  4. Mash for Texture: Once the berries have softened and the sauce has thickened, use a potato masher to achieve your desired texture.
  5. Strain (Optional): Strain the mixture through a fine-mesh sieve for a seedless sauce, if preferred.
  6. Cool and Store: Let the coulis cool to room temperature, then transfer it to a jar for refrigeration.

Notes

Taste the coulis as you go and adjust sweetness or acidity as needed. This coulis can be refrigerated for up to a week or frozen for future use.
