- 1 cup fresh strawberries, hulled and quartered
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1/2 cup granulated sugar (or honey/maple syrup)
- 2 tablespoons fresh lemon juice
Instructions
- Wash and Prepare the Berries: Rinse your berries under cold water and pat them dry gently. For strawberries, hull them and slice into quarters.
- Heat the Berries: In a medium saucepan over medium heat, combine the berries, sugar, and lemon juice. Stir gently to combine.
- Simmer: Allow the mixture to simmer for about 10–15 minutes, stirring occasionally.
- Mash for Texture: Once the berries have softened and the sauce has thickened, use a potato masher to achieve your desired texture.
- Strain (Optional): Strain the mixture through a fine-mesh sieve for a seedless sauce, if preferred.
- Cool and Store: Let the coulis cool to room temperature, then transfer it to a jar for refrigeration.
Notes
Taste the coulis as you go and adjust sweetness or acidity as needed. This coulis can be refrigerated for up to a week or frozen for future use.
