Ingredients

  • 2 cans white beans (cannellini or navy beans)
  • 1 pound boneless chicken breasts or thighs
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 4 cups chicken or vegetable broth
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat a splash of olive oil in a large pot or skillet over medium heat.
  2. Add the diced onions and sauté until softened (about 5 minutes).
  3. Toss in the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the chicken and cook until no longer pink (about 5-7 minutes).
  5. Sprinkle in the cumin, chili powder, and oregano, stirring well to coat the chicken.
  6. Pour in the broth and add the prepared white beans; bring to a gentle simmer.
  7. Let the chili simmer for 20-30 minutes, stirring occasionally. Adjust spices as needed.
  8. For a creamier texture, blend half the chili mixture and return it to the pot.
  9. Serve in bowls with various toppings as desired, alongside crusty bread or a light salad.

Notes

Feel free to add corn or bell peppers for extra crunch. For a vegetarian version, substitute chicken with tofu or extra beans.
