- 1 lb lean ground turkey
- 1/2 cup teriyaki sauce
- 1 tablespoon soy sauce or tamari
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 small onion, finely chopped
- 8 oz mushrooms, sliced
- 2 cups cooked rice
- 1 cup shredded carrots or thinly sliced bell pepper
- 2 scallions, chopped
- Sesame seeds and pickled ginger for garnish
Instructions
- Heat a large nonstick or stainless-steel skillet over medium-high heat. Add sesame oil, followed by minced garlic and ginger, and cook until fragrant for about 30 seconds.
- Add the chopped onion and sauté until translucent, about 3 minutes.
- Add the ground turkey, breaking it into small pieces, and cook until no longer pink, around 6–8 minutes. Season with soy sauce, salt, and pepper.
- Stir in the sliced mushrooms and cook until they release moisture and begin to brown, around 4 minutes. Pour in teriyaki sauce and lower the heat to medium; simmer until sauce thickens, about 2–3 minutes.
- Assemble bowls with rice, turkey mixture, and vegetables. Garnish with scallions, sesame seeds, and pickled ginger. Serve immediately.
Notes
You can use brown rice or cauliflower rice for healthier options and feel free to swap vegetables according to your preference.
