Ingredients

  • 1.5 lb boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup orange marmalade (or 1/2 cup fresh orange juice + 2 tbsp honey)
  • 1/4 cup soy sauce

Instructions

  1. Pat the chicken dry and season lightly with salt and pepper.
  2. Heat a large skillet over medium-high heat with a small amount of oil and sear the chicken in a single layer until golden, about 4-6 minutes per side.
  3. Reduce heat to medium and pour orange marmalade and soy sauce over the browned chicken, stirring to coat.
  4. Let the sauce simmer until it thickens and glazes the chicken, about 4-7 minutes.
  5. Finish with a toss in the pan to ensure each piece is glossy. Serve immediately over rice, noodles, or a salad.

Notes
