A quick and flavorful sauté of mushrooms and spinach, finished with garlic and butter for a comforting side dish or main.

- 10–12 ounces cremini or button mushrooms, sliced
- 8 ounces fresh baby spinach, well-rinsed and dried
- 2–3 cloves garlic, minced
- 2 tablespoons olive oil or 1 tablespoon olive oil + 1 tablespoon butter
- Salt and freshly ground black pepper, to taste
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon lemon juice or 1 teaspoon balsamic vinegar
- Fresh herbs: chopped parsley, chives, or thyme for garnish
- Optional: toasted pine nuts or sliced almonds for crunch
Instructions
- Prepare ingredients: slice mushrooms, mince garlic, and dry spinach thoroughly.
- Heat a large skillet over medium-high heat and add olive oil.
- Add mushrooms in a single layer, allowing them to brown without moving for 2–3 minutes.
- Stir and continue cooking until most of the liquid evaporates.
- Reduce heat to medium, add garlic and red pepper flakes; sauté for 30–60 seconds until fragrant.
- Add spinach in batches, tossing as you go, and season with salt and pepper.
- Finish with butter or another tablespoon of olive oil, then squeeze in lemon juice.
- Transfer to a warm dish, garnish, and serve immediately.
Notes
Tip: Use a roomy skillet to prevent overcrowding and ensure browning. For a creamier finish, stir in cream or crème fraîche at the end.
