Ingredients
- Puff pastry or homemade dough
- Breakfast sausage or ground meat
- Fresh eggs
- Cheddar or mozzarella cheese
- Fresh herbs (chives, parsley, or thyme)
- Optional: sautéed onions, bell peppers, or mushrooms
Instructions
- Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
- Cook the sausage in a skillet over medium heat until browned; add vegetables if using.
- Whisk the eggs in a bowl, season, and add to the skillet, stirring until just set. Remove from heat and let cool.
- Roll out the pastry and cut into squares or rectangles.
- Fill each square with the sausage and egg mixture, top with cheese and herbs.
- Fold and seal edges with a fork. Brush with beaten egg.
- Bake for 15–20 minutes or until golden brown.
- Cool slightly before serving.
Notes
