Description

Buttery pastry rolls filled with savory sausage, scrambled eggs, and fresh herbs, perfect for a satisfying breakfast.


Ingredients

  • Puff pastry or homemade dough
  • Breakfast sausage or ground meat
  • Fresh eggs
  • Cheddar or mozzarella cheese
  • Fresh herbs (chives, parsley, or thyme)
  • Optional: sautéed onions, bell peppers, or mushrooms

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Cook the sausage in a skillet over medium heat until browned; add vegetables if using.
  3. Whisk the eggs in a bowl, season, and add to the skillet, stirring until just set. Remove from heat and let cool.
  4. Roll out the pastry and cut into squares or rectangles.
  5. Fill each square with the sausage and egg mixture, top with cheese and herbs.
  6. Fold and seal edges with a fork. Brush with beaten egg.
  7. Bake for 15–20 minutes or until golden brown.
  8. Cool slightly before serving.
