Description

A comforting pumpkin bread topped with a crunchy buttery streusel, perfect for sharing with friends and family.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 cup pumpkin purée
  • 1/2 cup melted butter or neutral oil
  • 1/4 cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar (for streusel)
  • 1/3 cup flour (for streusel)
  • 1/4 teaspoon cinnamon (for streusel)
  • A pinch of salt (for streusel)
  • 4 tablespoons cold unsalted butter (for streusel)
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine dry ingredients (flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger).
  3. In another bowl, whisk eggs, pumpkin purée, melted butter/oil, sour cream/yogurt, vanillla, and sugars until smooth.
  4. Fold dry ingredients into wet mixture until just combined; do not overmix.
  5. For streusel, mix brown sugar, flour, cinnamon, salt, and cold butter until coarse crumbs form; add nuts if desired.
  6. Pour half the batter into the pan, sprinkle with half the streusel, then layer remaining batter and streusel on top.
  7. Bake for 50-65 minutes until toothpick comes out clean; tent with foil if streusel darkens too quickly.
  8. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Always measure flour correctly to avoid dense loaves. Use fresh baking powder and baking soda for best rise.
