Instructions
- Preheat oven to 375°F (190°C) and line a 15×10-inch jelly roll pan with parchment paper.
- In a mixing bowl, whisk together flour, sugar, spices, baking powder, baking soda, and salt.
- In another bowl, beat eggs and pumpkin puree until smooth, then fold in the dry ingredients.
- Pour batter into prepared pan and spread evenly. Bake for 15-20 minutes.
- Let the cake cool for 5 minutes in the pan, then invert onto a powdered sugar-dusted towel and roll it up gently.
- Whip together cream cheese, butter, powdered sugar, and vanilla until smooth.
- Once the cake is cool, unroll it, spread the frosting evenly, then roll it back up without the towel.
- Dust with powdered sugar before slicing and serving.
