- 1 cup pumpkin purée

- 1/2 cup brown sugar
- 1 large egg
- 2 cups all-purpose flour
- 1 tsp baking soda

- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1 cup chocolate chunks
- 1 cup miniature marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
- Mix in the pumpkin purée and the egg until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and ginger.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Gently fold in the chocolate chunks and mini marshmallows.
- Scoop rounded mounds of dough onto the prepared baking sheets, leaving space for spreading.
- Bake for 12-15 minutes until golden brown on the edges and centers are slightly underbaked.
- Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
For added s’mores effect, place a few extra marshmallows on top while the cookies are still hot.
