- 1 medium-sized pumpkin or butternut squash
- 1 cup fresh ricotta cheese
- 1/2 cup crispy bacon pieces
- 1 cup tender caramelized onions
- 1 sheet puff pastry or homemade tart crust
- 1 tablespoon olive oil
- A mix of fresh or dried herbs (thyme and rosemary)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Roll out your puff pastry or homemade crust and fit it into a tart pan.
- In a skillet, heat olive oil until shimmering. Add sliced onions and sauté over low heat for about 30 minutes until golden brown.
- Chop the pumpkin into small chunks, coat with olive oil, salt, pepper, and herbs, and roast in the oven for about 20–25 minutes until tender.
- In a bowl, combine roasted pumpkin, ricotta, and half of the caramelized onions. Season with salt, pepper, and additional herbs.
- Pour the filling into the prepared tart crust. Top with bacon and the remaining caramelized onions.
- Bake in the preheated oven for 30–35 minutes, or until the crust is golden and the filling is set.
- Allow the tart to rest for a few minutes before cutting and serving.
Notes
Be patient when caramelizing the onions and roasting the pumpkin to develop rich flavors. Serve warm with a salad or light vinaigrette.
