A creamy and smoky tart featuring pumpkin, ricotta, caramelized onions, and bacon, perfect for gatherings or a cozy meal.


Ingredients

  • 1 medium-sized pumpkin or butternut squash
  • 1 cup fresh ricotta cheese
  • 1/2 cup crispy bacon pieces
  • 1 cup tender caramelized onions
  • 1 sheet puff pastry or homemade tart crust
  • 1 tablespoon olive oil
  • A mix of fresh or dried herbs (thyme and rosemary)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Roll out your puff pastry or homemade crust and fit it into a tart pan.
  2. In a skillet, heat olive oil until shimmering. Add sliced onions and sauté over low heat for about 30 minutes until golden brown.
  3. Chop the pumpkin into small chunks, coat with olive oil, salt, pepper, and herbs, and roast in the oven for about 20–25 minutes until tender.
  4. In a bowl, combine roasted pumpkin, ricotta, and half of the caramelized onions. Season with salt, pepper, and additional herbs.
  5. Pour the filling into the prepared tart crust. Top with bacon and the remaining caramelized onions.
  6. Bake in the preheated oven for 30–35 minutes, or until the crust is golden and the filling is set.
  7. Allow the tart to rest for a few minutes before cutting and serving.

Notes

Be patient when caramelizing the onions and roasting the pumpkin to develop rich flavors. Serve warm with a salad or light vinaigrette.
