- 8 oz cream cheese, softened (for frosting)
- 1/2 cup unsalted butter, softened (for frosting)
- 2 cups powdered sugar (for frosting)
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease a standard loaf pan with butter or line it with parchment paper.
- In a medium bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt until thoroughly combined.
- In a large bowl, whisk together granulated sugar, brown sugar, and oil. Add eggs, pumpkin, and vanilla extract. Mix until smooth.
- Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
- Transfer the batter to the prepared loaf pan and smooth out the top. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- In a bowl, beat the softened cream cheese and butter until creamy. Gradually add powdered sugar and mix until smooth, then stir in vanilla extract.
- Once the loaf is completely cooled, frost it generously with the cream cheese frosting. Slice, serve, and enjoy.
Notes
For a healthier option, replace vegetable oil with applesauce and use whole wheat flour. Vegan cream cheese can be used for a dairy-free frosting.
