  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a standard loaf pan with butter or line it with parchment paper.
  2. In a medium bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt until thoroughly combined.
  3. In a large bowl, whisk together granulated sugar, brown sugar, and oil. Add eggs, pumpkin, and vanilla extract. Mix until smooth.
  4. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  5. Transfer the batter to the prepared loaf pan and smooth out the top. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  7. In a bowl, beat the softened cream cheese and butter until creamy. Gradually add powdered sugar and mix until smooth, then stir in vanilla extract.
  8. Once the loaf is completely cooled, frost it generously with the cream cheese frosting. Slice, serve, and enjoy.

Notes

For a healthier option, replace vegetable oil with applesauce and use whole wheat flour. Vegan cream cheese can be used for a dairy-free frosting.
