Delicious and cozy Pumpkin Cinnamon Scones, perfect for autumn gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold
  • 1 large egg
  • 1 tsp vanilla extract
  • Raw sugar for sprinkling

Instructions

  1. Preheat your oven to 400°F (205°C).
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. Dice the cold unsalted butter and blend it into the dry mixture until it resembles coarse crumbs.
  4. In another bowl, whisk together the pumpkin puree, egg, and vanilla extract. Pour into the dry ingredients and stir until just combined.
  5. Turn out the dough onto a floured surface and pat it into a circle 1-inch thick. Cut into wedges or use a biscuit cutter.
  6. Place the scones on a baking sheet lined with parchment paper. Brush with egg wash and sprinkle with raw sugar.
  7. Bake for 15-20 minutes until lightly golden. Cool slightly on a wire rack before serving.

Notes

Chill the scone dough for 30 minutes before baking for fluffier scones. Store leftovers in an airtight container.
