Ingredients

- 2 cups all-purpose flour
- 1/2 cup pumpkin puree
- 1/2 cup brown sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold
- 1 large egg
- 1 tsp vanilla extract
- Raw sugar for sprinkling
Instructions
- Preheat your oven to 400°F (205°C).
- In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
- Dice the cold unsalted butter and blend it into the dry mixture until it resembles coarse crumbs.
- In another bowl, whisk together the pumpkin puree, egg, and vanilla extract. Pour into the dry ingredients and stir until just combined.
- Turn out the dough onto a floured surface and pat it into a circle 1-inch thick. Cut into wedges or use a biscuit cutter.
- Place the scones on a baking sheet lined with parchment paper. Brush with egg wash and sprinkle with raw sugar.
- Bake for 15-20 minutes until lightly golden. Cool slightly on a wire rack before serving.
Notes
Chill the scone dough for 30 minutes before baking for fluffier scones. Store leftovers in an airtight container.
