  • 1 cup brown sugar (or coconut sugar)
  • 1/2 cup heavy cream (or coconut cream)
  • 1/4 cup unsalted butter (or coconut oil)
  • 8 oz dark chocolate (at least 60% cocoa)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger

Instructions

  1. Prepare Pumpkin Filling: In a saucepan over medium heat, combine the pumpkin puree, brown sugar, and spices. Stir continuously until the mixture thickens, roughly 5 to 7 minutes.
  2. Make the Caramel: In another saucepan, heat the sugar over medium-low heat, stirring until it melts into a light caramel color. Remove from heat, add heavy cream, stir until smooth, then mix in butter and a pinch of salt.
  3. Mold the Chocolates: Melt the dark chocolate in a double boiler. Pour a layer of chocolate in a silicone mold and freeze for about 10 minutes.
  4. Layer the Fillings: Remove from the freezer, add a spoonful of pumpkin filling, followed by caramel. Top with more melted chocolate.
  5. Chill and Set: Let the chocolates set in the fridge for at least an hour. Once firm, pop them out of the molds.
