Ingredients

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 cup pumpkin puree
- 1 cup powdered sugar
Instructions
- Cream together the softened unsalted butter and brown sugar until light and fluffy.
- Gradually add in the flour, baking soda, and spices. Mix until just combined.
- Wrap the dough in plastic wrap and chill for at least 60 minutes.
- Preheat your oven to 350°F (175°C) and roll out the chilled dough to about 1/2-inch thickness.
- Cut out cookie shapes and use a skewer to create Jack O’Lantern faces on half of the cookies.
- Bake for 10-12 minutes until the edges are golden.
- Mix pumpkin butter with powdered sugar until smooth.
- Spread pumpkin butter on one cookie and top with another to create a sandwich.
Notes
