Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 cup pumpkin puree
  • 1 cup powdered sugar

Instructions

  1. Cream together the softened unsalted butter and brown sugar until light and fluffy.
  2. Gradually add in the flour, baking soda, and spices. Mix until just combined.
  3. Wrap the dough in plastic wrap and chill for at least 60 minutes.
  4. Preheat your oven to 350°F (175°C) and roll out the chilled dough to about 1/2-inch thickness.
  5. Cut out cookie shapes and use a skewer to create Jack O’Lantern faces on half of the cookies.
  6. Bake for 10-12 minutes until the edges are golden.
  7. Mix pumpkin butter with powdered sugar until smooth.
  8. Spread pumpkin butter on one cookie and top with another to create a sandwich.
