  • 1 cup pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger (optional)
  • 1/4 teaspoon allspice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Stir in the pumpkin puree, brown sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, and spices.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid over-mixing.
  5. Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack. Once cool, cut into squares and enjoy!
