Ingredients

- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup shredded coconut
- 1/2 tsp baking powder
- Pinch of salt
- Pink food coloring (optional)
- Additional shredded coconut for coating
Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Combine the flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the butter mixture while alternating with the milk.
- Add a few drops of pink food coloring, if desired.
- Fold in the shredded coconut carefully.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely in the dish before cutting into bars.
- Roll each bar in additional shredded coconut before serving.
Notes
