  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 cups of shredded cheese (mozzarella and cheddar)
  • ½ cup of grated Parmesan cheese
  • 1 cup of breadcrumbs
  • ½ cup of milk or cream
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh herbs like basil or thyme for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with olive oil.
  2. Heat olive oil in a skillet over medium heat and sauté the chopped onions until translucent. Stir in the minced garlic and cook until fragrant, about 1 minute.
  3. Add the sliced zucchini to the skillet, seasoning with salt and pepper. Cook for 5-7 minutes until slightly tender, draining excess moisture if necessary.
  4. Combine the sautéed zucchini mixture with the shredded cheeses, breadcrumbs, and milk in a large mixing bowl. Mix gently until well combined.
  5. Pour the mixture into the greased baking dish and spread evenly. Top with remaining cheese and breadcrumbs.
  6. Bake uncovered for 30-35 minutes, or until the top is bubbling and golden brown. Let cool for a few minutes before serving.

Notes

To reduce moisture, sauté zucchini sufficiently. Experiment with different cheese types for added flavor.
