Ingredients

- 4 medium zucchinis, sliced
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 2 cups of shredded cheese (mozzarella and cheddar)
- ½ cup of grated Parmesan cheese
- 1 cup of breadcrumbs
- ½ cup of milk or cream
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Fresh herbs like basil or thyme for garnish
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with olive oil.
- Heat olive oil in a skillet over medium heat and sauté the chopped onions until translucent. Stir in the minced garlic and cook until fragrant, about 1 minute.
- Add the sliced zucchini to the skillet, seasoning with salt and pepper. Cook for 5-7 minutes until slightly tender, draining excess moisture if necessary.
- Combine the sautéed zucchini mixture with the shredded cheeses, breadcrumbs, and milk in a large mixing bowl. Mix gently until well combined.
- Pour the mixture into the greased baking dish and spread evenly. Top with remaining cheese and breadcrumbs.
- Bake uncovered for 30-35 minutes, or until the top is bubbling and golden brown. Let cool for a few minutes before serving.
Notes
To reduce moisture, sauté zucchini sufficiently. Experiment with different cheese types for added flavor.
