Description

A comforting and vibrant blend of flavors, these One-Skillet Turkey Enchiladas bring together ground turkey, zesty enchilada sauce, and fresh vegetables for a nourishing family favorite that’s easy to prepare.


Ingredients

  • 1 lb ground turkey
  • 6 flour or corn tortillas
  • 1 cup enchilada sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 bell pepper, diced
  • 1 cup corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add chopped onions and cook until soft and translucent. Add minced garlic and cook briefly until fragrant.
  2. Increase the heat and add ground turkey. Sauté until browned and cooked through, breaking it apart and seasoning with chili powder, cumin, salt, and pepper.
  3. Stir in diced bell peppers and corn, cooking until just tender.
  4. Pour in half the enchilada sauce and stir until well combined.
  5. Layer tortillas in the skillet, spoon in the turkey filling, and roll them up, placing seam-side down. Pour the remaining sauce over and sprinkle with cheese.
  6. Cover and simmer on low for about 10 minutes, or until cheese melts. For a golden finish, place under the broiler for a couple of minutes, watching carefully.
  7. Garnish with fresh cilantro and serve with lime wedges.

Notes

Warm tortillas slightly before rolling to prevent cracking. Don’t overload the tortillas to ensure easy rolling and presentation.
