- 1 lb ground turkey
- 6 flour or corn tortillas
- 1 cup enchilada sauce
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded sharp cheddar cheese
- 1 bell pepper, diced
- 1 cup corn
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat. Add chopped onions and cook until soft and translucent. Add minced garlic and cook briefly until fragrant.
- Increase the heat and add ground turkey. Sauté until browned and cooked through, breaking it apart and seasoning with chili powder, cumin, salt, and pepper.
- Stir in diced bell peppers and corn, cooking until just tender.
- Pour in half the enchilada sauce and stir until well combined.
- Layer tortillas in the skillet, spoon in the turkey filling, and roll them up, placing seam-side down. Pour the remaining sauce over and sprinkle with cheese.
- Cover and simmer on low for about 10 minutes, or until cheese melts. For a golden finish, place under the broiler for a couple of minutes, watching carefully.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
Warm tortillas slightly before rolling to prevent cracking. Don’t overload the tortillas to ensure easy rolling and presentation.
