Description

A comforting one-pot meal featuring vibrant tomatoes, fresh spinach, and a sprinkle of Parmesan.


Ingredients

  • Pasta (any type you prefer — spaghetti, penne, or gluten-free)
  • Fresh spinach
  • Canned tomatoes (crushed or diced)
  • Garlic
  • Olive oil
  • Butter
  • Crushed red pepper (optional)
  • Fresh herbs (basil or oregano)
  • Grated Parmesan cheese

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  2. Pour in the canned tomatoes and stir to combine with the garlic. Optionally, add a pinch of sugar to balance acidity.
  3. Toss in the pasta, enough water to cover (about 4 cups), and season with salt and pepper. Bring to a boil, then reduce to a simmer.
  4. Cover and cook according to pasta package instructions, stirring occasionally.
  5. A few minutes before pasta is al dente, add the fresh spinach and stir gently to wilt.
  6. Once cooked to your liking, mix in crushed red pepper and herbs, then sprinkle with Parmesan.
  7. Serve with a drizzle of olive oil.
