Ingredients
- Pasta (any type you prefer — spaghetti, penne, or gluten-free)
- Fresh spinach
- Canned tomatoes (crushed or diced)
- Garlic
- Olive oil
- Butter
- Crushed red pepper (optional)
- Fresh herbs (basil or oregano)
- Grated Parmesan cheese
Instructions
- Heat olive oil and butter in a large pot over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Pour in the canned tomatoes and stir to combine with the garlic. Optionally, add a pinch of sugar to balance acidity.
- Toss in the pasta, enough water to cover (about 4 cups), and season with salt and pepper. Bring to a boil, then reduce to a simmer.
- Cover and cook according to pasta package instructions, stirring occasionally.
- A few minutes before pasta is al dente, add the fresh spinach and stir gently to wilt.
- Once cooked to your liking, mix in crushed red pepper and herbs, then sprinkle with Parmesan.
- Serve with a drizzle of olive oil.
