Instructions
- Heat olive oil in a large skillet over medium heat. Sauté the diced onion and minced garlic until fragrant and translucent.
- Add the diced bell peppers and sauté until tender.
- Sprinkle in the smoked paprika, ground cumin, and chili flakes, and stir to combine.
- Stir in the fresh or canned tomatoes, allowing the mixture to simmer for about five minutes.
- Nestle the cod fillets into the sauce, gently spooning the sauce over the top.
- Cover the skillet and cook for approximately 10 minutes, until the cod flakes easily with a fork.
- Before serving, sprinkle fresh herbs over the top.
