  • 2 cups fresh tomatoes or 1 can crushed tomatoes
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 1 pinch chili flakes
  • Salt and pepper to taste
  • Fresh herbs like cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the diced onion and minced garlic until fragrant and translucent.
  2. Add the diced bell peppers and sauté until tender.
  3. Sprinkle in the smoked paprika, ground cumin, and chili flakes, and stir to combine.
  4. Stir in the fresh or canned tomatoes, allowing the mixture to simmer for about five minutes.
  5. Nestle the cod fillets into the sauce, gently spooning the sauce over the top.
  6. Cover the skillet and cook for approximately 10 minutes, until the cod flakes easily with a fork.
  7. Before serving, sprinkle fresh herbs over the top.
