Ingredients
- Chicken thighs or breasts (preferably skin-on)
- Couscous (traditional or whole wheat)
- Chicken broth or vegetable stock
- Onions
- Garlic
- Cinnamon
- Cumin
- Coriander
- Paprika
- Fresh cilantro
- Fresh parsley
- Dried fruits (like apricots or raisins)
- Bell peppers (or vegetables of your choice)
- Carrots
- Olive oil
- Salt
Instructions
- Prep your ingredients: chop onions and garlic, and cut the chicken into even pieces if necessary.
- In a large pot or skillet, heat olive oil over medium-high heat. Add the chicken, season with salt and spices, and sauté until golden brown on all sides.
- Add onions and garlic to the pot, cooking until softened, about 3-4 minutes.
- Toss in dried fruits and chopped vegetables, stirring for another minute or two.
- Pour in the chicken broth, scraping up any browned bits. Bring to a gentle simmer.
- Once simmering, add couscous and stir to distribute evenly. Cover and remove from heat, allowing to sit for 5-10 minutes.
- Fluff the couscous with a fork, mixing in freshly chopped herbs. Taste and adjust seasoning if needed.
Notes
For a vegetarian option, substitute chicken with chickpeas or lentils. Quinoa can replace couscous for a gluten-free dish.
