Description

Ingredients

  • 3 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 1 pound boneless, skinless chicken breasts, diced
  • 6 cups chicken broth
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh thyme and parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions, garlic, and carrots, and sauté until tender, about 5 minutes.
  2. Stir in the diced chicken and cook until no longer pink. Then, pour in the chicken broth and bring to a boil.
  3. Add the gnocchi and simmer for 4–5 minutes, until cooked and floating. Stir in the spinach until wilted.
  4. Reduce the heat to low, stir in the heavy cream, and season with salt, pepper, and fresh herbs.
  5. Ladle the soup into bowls and garnish with fresh parsley.

Notes

Use fresh ingredients for the best flavor. Avoid overcooking the gnocchi to prevent mushiness.
