- 3 tablespoons butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 1 pound boneless, skinless chicken breasts, diced
- 6 cups chicken broth
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh thyme and parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the onions, garlic, and carrots, and sauté until tender, about 5 minutes.
- Stir in the diced chicken and cook until no longer pink. Then, pour in the chicken broth and bring to a boil.
- Add the gnocchi and simmer for 4–5 minutes, until cooked and floating. Stir in the spinach until wilted.
- Reduce the heat to low, stir in the heavy cream, and season with salt, pepper, and fresh herbs.
- Ladle the soup into bowls and garnish with fresh parsley.
Notes
Use fresh ingredients for the best flavor. Avoid overcooking the gnocchi to prevent mushiness.
