- 1 pound fresh salmon fillets
- Olive oil (for sautéing and drizzling)
- 1 teaspoon cumin
- 1 teaspoon paprika
- ¼ teaspoon cinnamon
- Fresh cilantro, chopped (for garnish)
- 1 cup couscous
- 1½ cups vegetable broth or water
- Your choice of vegetables (bell peppers, zucchini, carrots)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the salmon fillets under cold water and pat them dry with a paper towel.
- In a small bowl, mix the cumin, paprika, and cinnamon. Rub this spice blend onto the salmon fillets with a drizzle of olive oil and let it marinate for about 15 minutes.
- In a saucepan, bring the vegetable broth (or water) to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.
- Sauté your chosen vegetables in a skillet over medium heat until tender and mix them into the couscous.
- Place the marinated salmon on a parchment-lined baking sheet and roast in the oven for about 12-15 minutes, or until the salmon flakes easily with a fork.
- To serve, create a bed of couscous and vegetables on each plate, topping it with a piece of salmon and garnishing with fresh cilantro.
Notes
Avoid overcooking the salmon to maintain its buttery texture. Use high-quality wild-caught salmon for the best flavor.
