Description

A comforting loaf that beautifully marries the flavors of pumpkin and ripe bananas, enhanced with warm spices.


Ingredients

  • 1 cup ripe, mashed bananas
  • 1 cup canned pumpkin puree
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • ½ cup melted butter
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • Pinch of salt
  • Nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Combine the mashed bananas and pumpkin puree in a large bowl and stir until well blended.
  3. Add the brown sugar, granulated sugar, eggs, and melted butter to the banana and pumpkin mixture. Mix until smooth.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring just until combined.
  6. If adding nuts or chocolate chips, gently fold them in now.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for approximately 60-70 minutes, or until a toothpick comes out clean. If the top browns too quickly, tent it with foil.
  9. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

For extra indulgence, glaze with powdered sugar and milk or serve with cream cheese frosting.
