- 1 cup ripe, mashed bananas
- 1 cup canned pumpkin puree
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- ½ cup melted butter
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- Pinch of salt
- Nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Combine the mashed bananas and pumpkin puree in a large bowl and stir until well blended.
- Add the brown sugar, granulated sugar, eggs, and melted butter to the banana and pumpkin mixture. Mix until smooth.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually incorporate the dry ingredients into the wet mixture, stirring just until combined.
- If adding nuts or chocolate chips, gently fold them in now.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for approximately 60-70 minutes, or until a toothpick comes out clean. If the top browns too quickly, tent it with foil.
- Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
For extra indulgence, glaze with powdered sugar and milk or serve with cream cheese frosting.
