Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Roast the butternut squash until tender, about 30-40 minutes. Mash until smooth.
- In a large bowl, whisk together the mashed squash, sugar, and oil or melted butter. Beat in eggs one at a time.
- In another bowl, combine flour, baking soda, baking powder, salt, and spices: cinnamon, ginger, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in any extras like nuts or chocolate chips.
- Pour into the greased loaf pan and bake for 60-70 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
