Description

A comforting and nutritious ham soup packed with flavor, perfect for family gatherings and cozy evenings.

Ingredients

Scale
  • 2 cups ham, diced
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 2 cups greens (spinach or kale)
  • 1 can white beans (optional)
  • Olive oil for sautéing

Instructions

  1. Heat a large soup pot over medium heat and sauté onions, carrots, and celery in olive oil until soft.
  2. Add minced garlic, sautéing for about a minute.
  3. Mix in the diced ham, allowing it to release its juices and coat the vegetables.
  4. Pour in the broth, add bay leaves, thyme, and pepper, then bring to a simmer.
  5. After 20 minutes, stir in greens and beans, letting them wilt. Remove bay leaves before serving.

Notes

Consider simmering the soup longer for more intense flavors. Add a splash of vinegar for brightness right before serving.
