Description

Delicious Mint Chocolate Cupcakes that balance rich chocolate with refreshing mint, perfect for any occasion.


Ingredients

  • ¾ cup cocoa powder
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 large eggs (or flaxseed meal for vegan)
  • 1 cup buttermilk (or milk with vinegar)
  • 1 tsp peppermint extract
  • ¾ cup chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F and prepare a cupcake tin with liners.
  2. In a bowl, combine the flour, cocoa powder, baking powder, and baking soda. Whisk until blended.
  3. In another bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Mix in the buttermilk and peppermint extract until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in the chocolate chips.
  7. Spoon the batter into the prepared cupcake liners, filling each three-quarters full.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow cupcakes to cool completely before frosting.
