Instructions
- Preheat your oven to 350°F and prepare a cupcake tin with liners.
- In a bowl, combine the flour, cocoa powder, baking powder, and baking soda. Whisk until blended.
- In another bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Mix in the buttermilk and peppermint extract until combined.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the chocolate chips.
- Spoon the batter into the prepared cupcake liners, filling each three-quarters full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow cupcakes to cool completely before frosting.
