Ingredients

  • 200g high-quality dark chocolate (at least 60% cocoa)
  • 1 cup fresh mint leaves, chopped
  • 100g unsalted butter, cubed
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon mint extract

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking dish by greasing it or lining it with parchment paper.
  2. Melt the dark chocolate and butter in a heatproof bowl over a double boiler or in the microwave, stirring frequently.
  3. Stir in the chopped fresh mint leaves (or peppermint oil) once the chocolate mixture is smooth. Let it cool slightly.
  4. In a separate bowl, whisk eggs and sugar until light and fluffy (about 4 minutes).
  5. Gently fold the chocolate mixture into the egg mixture, and sift in the flour, folding until no flour streaks remain.
  6. Pour the batter into the prepared baking dish and smooth it out. Bake for 25-30 minutes.
  7. Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  8. Top with a mint-infused frosting or dust with powdered sugar before serving. Enjoy with a sprig of mint or vanilla ice cream!
