- 1 cup pumpkin purée
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1 homemade or store-bought pie crust
- Caramel sauce for drizzling
- Sea salt for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by combining flour, sugar, and salt in a bowl. Cut in cold butter until it resembles coarse crumbs. Add ice water until a dough forms, then chill for 30 minutes.
- In a mixing bowl, whisk together pumpkin purée, sugars, and spices. Incorporate eggs one at a time, then mix in heavy cream until smooth.
- Roll out your crust and transfer it to a pie dish. Pour the filling into the crust.
- Bake for 50-60 minutes, or until the filling is set with a slight jiggle in the center.
- Let the pie cool completely before drizzling warm caramel over the top and sprinkling with sea salt.
- Slice and share, or keep it all for yourself!
Notes
For an extra caramel kick, make a homemade caramel sauce to drizzle on top. It’s best to bake the day before serving for flavors to deepen.
