Description

A delightful fall dessert combining creamy pumpkin and rich caramel in a flaky crust.


Ingredients

  • 1 cup pumpkin purée
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 homemade or store-bought pie crust
  • Caramel sauce for drizzling
  • Sea salt for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by combining flour, sugar, and salt in a bowl. Cut in cold butter until it resembles coarse crumbs. Add ice water until a dough forms, then chill for 30 minutes.
  3. In a mixing bowl, whisk together pumpkin purée, sugars, and spices. Incorporate eggs one at a time, then mix in heavy cream until smooth.
  4. Roll out your crust and transfer it to a pie dish. Pour the filling into the crust.
  5. Bake for 50-60 minutes, or until the filling is set with a slight jiggle in the center.
  6. Let the pie cool completely before drizzling warm caramel over the top and sprinkling with sea salt.
  7. Slice and share, or keep it all for yourself!

Notes

For an extra caramel kick, make a homemade caramel sauce to drizzle on top. It’s best to bake the day before serving for flavors to deepen.
