Instructions

  1. Combine masa harina, baking powder, and salt in a bowl. Beat in lard or shortening until fluffy, then gradually mix in broth until you achieve a soft, doughy consistency.
  2. Soak the corn husks in warm water for at least an hour to make them pliable.
  3. Lay a soaked corn husk flat, scoop a tablespoon of masa into the center, add your filling, fold the sides over, and roll it up tightly.
  4. Arrange the tamales upright in a steamer basket, cover, and steam for 1 to 1.5 hours, checking water levels occasionally.
  5. Test for doneness by ensuring the masa separates easily from the husks.
  6. Serve with salsa, guacamole, or sour cream.
