- 1 pound of boneless, skinless chicken breasts or thighs
- 1 cup of white rice (or brown rice for a healthier twist)
- 6 cups of low-sodium chicken broth
- 1 medium onion, diced
- 4 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 jalapeño, diced (seeds removed for less heat)
- 1 can of diced tomatoes (with or without green chilies)
- 1 tablespoon of cumin
- 1 tablespoon of chili powder
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Olive oil, salt, and pepper to taste
Instructions
- In a large pot over medium heat, add a drizzle of olive oil. Once hot, add the diced onions, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables soften.
- Push the vegetables to the side and add the chicken. Season with cumin, chili powder, salt, and pepper. Brown the chicken for about 4-5 minutes on each side.
- Pour in the chicken broth and bring to a gentle boil. Stir in the rice and diced tomatoes.
- Reduce the heat and cover the pot. Allow to simmer for about 20-25 minutes, or until the chicken is cooked through and the rice is tender.
- Remove the chicken, shred it, and return it to the pot.
- Adjust seasoning as needed and finish with fresh cilantro.
- Serve with lime wedges and enjoy.
Notes
