Ingredients

  • 1 pound of boneless, skinless chicken breasts or thighs
  • 1 cup of white rice (or brown rice for a healthier twist)
  • 6 cups of low-sodium chicken broth
  • 1 medium onion, diced
  • 4 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 jalapeño, diced (seeds removed for less heat)
  • 1 can of diced tomatoes (with or without green chilies)
  • 1 tablespoon of cumin
  • 1 tablespoon of chili powder
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Olive oil, salt, and pepper to taste

Instructions

  1. In a large pot over medium heat, add a drizzle of olive oil. Once hot, add the diced onions, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables soften.
  2. Push the vegetables to the side and add the chicken. Season with cumin, chili powder, salt, and pepper. Brown the chicken for about 4-5 minutes on each side.
  3. Pour in the chicken broth and bring to a gentle boil. Stir in the rice and diced tomatoes.
  4. Reduce the heat and cover the pot. Allow to simmer for about 20-25 minutes, or until the chicken is cooked through and the rice is tender.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Adjust seasoning as needed and finish with fresh cilantro.
  7. Serve with lime wedges and enjoy.

Notes

Feel free to customize ingredients and adjust spice levels based on preference. Excellent with crusty bread or tortilla chips.
