Description

Crispy, flaky pastries filled with sautéed spinach, crumbled feta, and fresh herbs, perfect for gatherings or a cozy dinner.


Ingredients

  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill or parsley
  • 1 sheet puff pastry
  • Salt to taste
  • Sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, then mix in fresh spinach and cook until wilted, approximately 2-3 minutes.
  3. Once cooled, combine spinach mixture in a bowl with crumbled feta, a sprinkle of salt, and choice of herbs.
  4. Roll out puff pastry on a floured surface and cut into desired shapes (triangles or squares).
  5. Place a spoonful of the spinach and feta mixture in the center of each pastry piece. Fold over edges and seal tightly.
  6. Brush tops with olive oil and sprinkle with sesame seeds if desired.
  7. Bake for 15-20 minutes or until the crisps are puffed and golden brown.

Notes

Serve warm for the best flavor experience. Best paired with a salad or dipping sauce.
