- 2 cups fresh spinach
- 1 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh dill or parsley
- 1 sheet puff pastry
- Salt to taste
- Sesame seeds or everything bagel seasoning (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, then mix in fresh spinach and cook until wilted, approximately 2-3 minutes.
- Once cooled, combine spinach mixture in a bowl with crumbled feta, a sprinkle of salt, and choice of herbs.
- Roll out puff pastry on a floured surface and cut into desired shapes (triangles or squares).
- Place a spoonful of the spinach and feta mixture in the center of each pastry piece. Fold over edges and seal tightly.
- Brush tops with olive oil and sprinkle with sesame seeds if desired.
- Bake for 15-20 minutes or until the crisps are puffed and golden brown.
Notes
Serve warm for the best flavor experience. Best paired with a salad or dipping sauce.
