- 3 cups shredded cooked chicken
- 8 oz cream cheese, softened
- 1/2 cup heavy cream
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- 8 oz cremini mushrooms, sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 4 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp fresh thyme leaves
- 1/4 tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Lightly butter a 9-inch skillet or small baking dish.
- Heat the butter and olive oil in a skillet over medium-high heat. Add the sliced mushrooms and sauté until golden, about 6–8 minutes.
- Reduce heat to medium and add the minced garlic, cooking until fragrant, about 30 seconds.
- Add the sun-dried tomatoes and thyme, and season with salt, pepper, and red pepper flakes.
- In a bowl, beat the cream cheese until smooth, then mix in the heavy cream until glossy.
- Stir in the shredded chicken, sautéed mixture, and half each of the Parmesan and mozzarella. Adjust seasoning.
- Spoon the mixture into the prepared skillet, smoothing the top, then sprinkle with remaining cheeses.
- Bake for 15–20 minutes until bubbling and golden. Broil for 1–2 minutes for a charred top.
- Let rest for 5 minutes before serving, garnishing with fresh thyme and olive oil if desired.
Notes
Serve warm with toasted sourdough, vegetable sticks, or whole-grain crackers. Can be made ahead and reheated.
