Ingredients

  • 1 cup high-quality cocoa powder
  • 8 oz bittersweet chocolate (at least 60% cocoa content)
  • 1 ½ cups unbleached all-purpose flour
  • ¾ cup finely chopped pistachios (toasted)
  • ½ cup unsalted high-fat butter
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a bar cake pan with parchment paper.
  2. In a heatproof bowl, melt bittersweet chocolate and unsalted butter over a simmering pot of water; stir frequently until smooth.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  4. In another large bowl, beat eggs and sugar until light and fluffy; add the melted chocolate-butter mixture and vanilla extract.
  5. Gradually mix the dry ingredients with the wet until just combined; do not overmix.
  6. Gently fold in chopped pistachios.
  7. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  9. Serve as desired, optionally garnished with powdered sugar or chocolate ganache.

Notes

For enhanced flavor, consider adding a teaspoon of espresso powder to the batter. Serve with whipped cream or ice cream for an extra treat.
