- 1 cup high-quality cocoa powder
- 8 oz bittersweet chocolate (at least 60% cocoa content)
- 1 ½ cups unbleached all-purpose flour
- ¾ cup finely chopped pistachios (toasted)
- ½ cup unsalted high-fat butter
- 3 large eggs
- 1 cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a bar cake pan with parchment paper.
- In a heatproof bowl, melt bittersweet chocolate and unsalted butter over a simmering pot of water; stir frequently until smooth.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another large bowl, beat eggs and sugar until light and fluffy; add the melted chocolate-butter mixture and vanilla extract.
- Gradually mix the dry ingredients with the wet until just combined; do not overmix.
- Gently fold in chopped pistachios.
- Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
- Serve as desired, optionally garnished with powdered sugar or chocolate ganache.
Notes
For enhanced flavor, consider adding a teaspoon of espresso powder to the batter. Serve with whipped cream or ice cream for an extra treat.
