Ingredients
- Boneless, skinless chicken thighs or breasts
- Fresh lemon juice and zest
- Pesto sauce
- Egg noodles or preferred noodle type
- Fresh spinach
- Fresh peas
- Aromatic garlic
- Chopped onion
- Chicken broth
- Olive oil
- Salt
- Pepper
Instructions
- In a large pot, heat olive oil over medium heat. Season chicken with salt and pepper and brown for 4-5 minutes per side. Remove and set aside.
- Add chopped onion and garlic to the pot; sauté until fragrant and translucent, about 3 minutes.
- Return chicken to the pot, pour in chicken broth, and bring to boil. Simmer for about 20 minutes, or until chicken is cooked through.
- Remove chicken to shred and add noodles to pot, cooking until tender.
- Stir in shredded chicken, peas, spinach, lemon juice, and pesto. Adjust seasoning to taste.
- Ladle soup into bowls, garnishing with fresh parsley or extra pesto. Enjoy!
Notes
Feel free to substitute chicken with turkey or chickpeas and use veggie broth for a lighter option. Avoid using dried or stale pesto.
