Description

Ingredients

  • Boneless, skinless chicken thighs or breasts
  • Fresh lemon juice and zest
  • Pesto sauce
  • Egg noodles or preferred noodle type
  • Fresh spinach
  • Fresh peas
  • Aromatic garlic
  • Chopped onion
  • Chicken broth
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Season chicken with salt and pepper and brown for 4-5 minutes per side. Remove and set aside.
  2. Add chopped onion and garlic to the pot; sauté until fragrant and translucent, about 3 minutes.
  3. Return chicken to the pot, pour in chicken broth, and bring to boil. Simmer for about 20 minutes, or until chicken is cooked through.
  4. Remove chicken to shred and add noodles to pot, cooking until tender.
  5. Stir in shredded chicken, peas, spinach, lemon juice, and pesto. Adjust seasoning to taste.
  6. Ladle soup into bowls, garnishing with fresh parsley or extra pesto. Enjoy!

Notes

Feel free to substitute chicken with turkey or chickpeas and use veggie broth for a lighter option. Avoid using dried or stale pesto.
