Description

Delightfully zesty lemon cookies topped with a sweet icing, perfect for festive celebrations.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 tablespoons fresh lemon zest
  • ¼ cup fresh lemon juice
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  3. Add lemon zest and juice, mixing until combined.
  4. Beat in eggs and vanilla extract one at a time.
  5. In a separate bowl, whisk flour, baking soda, baking powder, and salt. Gradually add dry mixture to wet ingredients until just combined.
  6. Scoop dough onto prepared baking sheet, allowing space between each cookie.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Once cooled, prepare icing by whisking powdered sugar with a splash of lemon juice until smooth, then drizzle over cookies.

Notes

Using fresh lemons enhances flavor. Consider room temperature butter for better mixing.
