- 2 lamb shanks
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 1 cup low-sodium beef broth
- 1 cup red wine (such as Merlot or Cabernet Sauvignon)
- Fresh rosemary sprigs
- Olive oil
- Salt and pepper
- Optional: mushrooms for an earthier flavor
Instructions
- Brown the Meat: Heat a tablespoon of olive oil in a large skillet over medium heat. Season the lamb shanks liberally with salt and pepper. Add them to the skillet and sear on all sides until golden brown, about 4–5 minutes.
- Sauté Aromatics: In the same skillet, add the diced onion, carrots, and garlic. Sauté until the onions are translucent, stirring frequently.
- Deglaze the Pan: Pour in the red wine, scraping up any browned bits from the bottom of the skillet.
- Simmer to Perfection: Return the lamb to the skillet along with beef broth and rosemary. Bring to a gentle simmer, cover, and let it cook for about 2–3 hours or until the meat is fork-tender.
- Final Touches: Remove the lamb from the skillet and let it rest. Strain the gravy, discard the solids, and return it to simmer to thicken.
