Instructions

  1. Brown the Meat: Heat a tablespoon of olive oil in a large skillet over medium heat. Season the lamb shanks liberally with salt and pepper. Add them to the skillet and sear on all sides until golden brown, about 4–5 minutes.
  2. Sauté Aromatics: In the same skillet, add the diced onion, carrots, and garlic. Sauté until the onions are translucent, stirring frequently.
  3. Deglaze the Pan: Pour in the red wine, scraping up any browned bits from the bottom of the skillet.
  4. Simmer to Perfection: Return the lamb to the skillet along with beef broth and rosemary. Bring to a gentle simmer, cover, and let it cook for about 2–3 hours or until the meat is fork-tender.
  5. Final Touches: Remove the lamb from the skillet and let it rest. Strain the gravy, discard the solids, and return it to simmer to thicken.
