- 4 chicken legs (bone-in, skin-on)
- 1/2 cup soy sauce
- 1/4 cup brown sugar (or honey)
- 2 tbsp sesame oil
- 4 cloves fresh garlic (crushed or minced)
- 1 tbsp fresh ginger (grated)
- 2 green onions (for garnish)
- 1 tbsp toasted sesame seeds
- Optional: Korean red pepper flakes or gochujang for heat
Instructions
- In a mixing bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger to create the marinade.
- Place chicken legs in a resealable bag or shallow dish, pour the marinade over the legs, seal, and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill (or oven) to medium-high heat.
- Remove chicken legs from the marinade, shake off excess, and grill skin-side down for about 10 minutes, flipping occasionally, until the internal temperature reaches 165°F, typically around 30-35 minutes.
- Let chicken rest for a few minutes, then garnish with chopped green onions and toasted sesame seeds before serving.
Notes
For best results, marinate the chicken overnight and don’t overcrowd the grill. Rest the chicken before slicing.
