A comforting and versatile Jiffy Corn Casserole that’s perfect for any gathering.

Ingredients

Scale
  • 1 box Jiffy Corn Muffin Mix
  • 1 can (15 oz) canned corn, drained (or fresh/frozen corn)
  • 1 cup sour cream (or Greek yogurt)
  • 2 eggs, beaten (or flax egg for vegan)
  • 1/2 cup melted butter (or olive oil)
  • Optional: shredded cheese, sautéed onions, or spicy peppers

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine Jiffy Corn Muffin Mix, drained corn, sour cream, beaten eggs, and melted butter. Stir until just combined.
  3. Fold in any extra ingredients like cheese or sautéed onions if desired.
  4. Pour the mixture into a greased 8×8 inch baking dish.
  5. Bake for about 45 minutes until the top is golden brown and a toothpick inserted comes out clean.
  6. Allow to rest for 10 minutes before serving.

Notes

For best results, avoid overmixing the batter, and check for doneness around the 35-minute mark to prevent dryness.
