- 2 onions, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 to 2 cups water or broth
- 1 package Japanese curry roux
- Salt and black pepper, to taste
- Optional: soy sauce or Worcestershire sauce (to taste)
Instructions
- Season beef cubes with salt and black pepper.
- Heat oil in a large skillet over medium-high heat and brown the beef in batches.
- Remove beef and sauté onions until translucent.
- Add carrots and potatoes, cooking for a few minutes before returning beef to the pan.
- Pour in water or broth to cover ingredients, bring to a gentle boil, reduce heat, and simmer uncovered for 1 hour.
- Stir in the curry roux until dissolved and continue simmering for another 10-15 minutes until thickened.
- Adjust seasoning and serve hot over rice or with bread.
Notes
Letting the curry sit for a day enhances the flavor. Rewarm gently before serving.
