A comforting and savory dish featuring tender beef and a rich curry sauce, perfect for sharing with family and friends.

Ingredients

Scale
  • 1 lb beef (chuck or brisket), cubed
  • 1 tablespoon oil
  • 2 onions, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 to 2 cups water or broth
  • 1 package Japanese curry roux
  • Salt and black pepper, to taste
  • Optional: soy sauce or Worcestershire sauce (to taste)

Instructions

  1. Season beef cubes with salt and black pepper.
  2. Heat oil in a large skillet over medium-high heat and brown the beef in batches.
  3. Remove beef and sauté onions until translucent.
  4. Add carrots and potatoes, cooking for a few minutes before returning beef to the pan.
  5. Pour in water or broth to cover ingredients, bring to a gentle boil, reduce heat, and simmer uncovered for 1 hour.
  6. Stir in the curry roux until dissolved and continue simmering for another 10-15 minutes until thickened.
  7. Adjust seasoning and serve hot over rice or with bread.

Notes

Letting the curry sit for a day enhances the flavor. Rewarm gently before serving.
