- 2 cups shredded chicken (rotisserie chicken works well)
- 8 flour or corn tortillas
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2–3 diced fresh jalapeños (adjust to taste)
- 1/2 cup crumbled bacon
- 1 cup enchilada sauce
Instructions
- In a large bowl, mix shredded chicken, softened cream cheese, chopped jalapeños, crumbled bacon, and half of the shredded cheddar cheese until combined.
- Spoon a generous amount of the chicken mixture into each tortilla, rolling tightly, and placing seam-side down in a greased baking dish.
- Pour enchilada sauce over the tortillas and sprinkle with remaining shredded cheese.
- Preheat oven to 375°F (190°C) and bake for 25-30 minutes until cheese is melted and bubbly.
- Let the enchiladas rest for 5-10 minutes before serving.
Notes
Pre-cooking the tortillas in a dry skillet can enhance their flexibility. Allowing the enchiladas to rest after baking helps with presentation.
