Description

These creamy and cheesy enchiladas combine shredded chicken, jalapeños, and crispy bacon, creating a comforting dish perfect for any gathering.


Ingredients

  • 2 cups shredded chicken (rotisserie chicken works well)
  • 8 flour or corn tortillas
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 23 diced fresh jalapeños (adjust to taste)
  • 1/2 cup crumbled bacon
  • 1 cup enchilada sauce

Instructions

  1. In a large bowl, mix shredded chicken, softened cream cheese, chopped jalapeños, crumbled bacon, and half of the shredded cheddar cheese until combined.
  2. Spoon a generous amount of the chicken mixture into each tortilla, rolling tightly, and placing seam-side down in a greased baking dish.
  3. Pour enchilada sauce over the tortillas and sprinkle with remaining shredded cheese.
  4. Preheat oven to 375°F (190°C) and bake for 25-30 minutes until cheese is melted and bubbly.
  5. Let the enchiladas rest for 5-10 minutes before serving.

Notes

Pre-cooking the tortillas in a dry skillet can enhance their flexibility. Allowing the enchiladas to rest after baking helps with presentation.
