- 1 pound fresh green beans, trimmed and blanched
- 1 tablespoon unsalted butter
- 1 tablespoon neutral oil
- 1 yellow onion or shallot, thinly sliced
- 3 garlic cloves, minced
- 1 tablespoon sweet Hungarian paprika
- 1 tablespoon tomato paste or 1/2 cup diced tomatoes
- 8 ounces cremini or button mushrooms, sliced
- Salt and freshly ground black pepper to taste
- Fresh herbs (dill or parsley), for garnish
- Optional: crumbled bacon, feta, or sour cream
Instructions
- Blanch the green beans in salted boiling water for 2–3 minutes until just tender. Transfer to ice water to stop cooking, drain, and pat dry.
- In a skillet over medium heat, add the oil and butter. Once the butter foams, add the sliced onions and cook until softened, about 5 minutes.
- Add the mushrooms and cook until their liquid evaporates and they brown, about 4–6 minutes.
- Stir in the garlic and tomato paste or diced tomatoes. Cook for 1 minute before adding paprika; stir to combine.
- Add the blanched green beans, tossing to coat. Sauté for 3–5 minutes until heated through.
- Finish with a squeeze of lemon or vinegar, and stir in fresh herbs. Season with salt and pepper. Serve warm.
Notes
Use fresh paprika for vibrant color and aroma. For a smoky flavor, choose smoked paprika but use slightly less.
