- 2 lbs Chicken thighs or breasts
- 1/2 cup Hot honey
- 1 cup Bell peppers, chopped
- 1 cup Red onions, chopped
- 1 cup Cooked rice or quinoa
- 1/4 cup Fresh herbs (cilantro or basil)
- Salt, to taste
- Pepper, to taste
- Juice of 1 lime
- 2 tbsp Butter or oil (for cooking)
Instructions
- Prepare the ingredients: Begin by chopping your vegetables and setting aside. Pat chicken dry if using thighs for a crispier finish.
- Marinate the chicken: In a bowl, mix hot honey with salt, pepper, and lime juice. Add the chicken and let it marinate for at least 30 minutes.
- Cook the chicken: Heat a skillet over medium-high heat, add butter, and once melted, add the marinated chicken. Cook for 5-7 minutes on each side until fully cooked.
- Sauté the vegetables: In the same skillet, toss in your selected vegetables with a pinch of salt and sauté until just tender.
- Assembly: In bowls, create a base with rice or quinoa, layer with vegetables, and top with sliced chicken. Drizzle with more hot honey and add fresh herbs.
- Enjoy: Serve immediately, accompanied by toasted bread if desired.

Adjust the heat level by adding more honey or heat to taste.
