  • 1 cup Bell peppers, chopped
  • 1 cup Red onions, chopped
  • 1 cup Cooked rice or quinoa
  • 1/4 cup Fresh herbs (cilantro or basil)
  • Salt, to taste
  • Pepper, to taste
  • Juice of 1 lime
  • 2 tbsp Butter or oil (for cooking)

Instructions

  1. Prepare the ingredients: Begin by chopping your vegetables and setting aside. Pat chicken dry if using thighs for a crispier finish.
  2. Marinate the chicken: In a bowl, mix hot honey with salt, pepper, and lime juice. Add the chicken and let it marinate for at least 30 minutes.
  3. Cook the chicken: Heat a skillet over medium-high heat, add butter, and once melted, add the marinated chicken. Cook for 5-7 minutes on each side until fully cooked.
  4. Sauté the vegetables: In the same skillet, toss in your selected vegetables with a pinch of salt and sauté until just tender.
