- 1/4 cup Honey
- 4 cups Fresh Greens (romaine, arugula)
- 1 Avocado, sliced
- 1 Bell Pepper, diced
- 1 Cucumber, sliced
- 1/4 cup Nuts or Seeds (almonds, sesame)
- Fresh Herbs (cilantro, green onions)
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- 1 teaspoon Chili Flakes
- Juice of 1 Lime
Instructions
- Marinate the chicken: Combine honey, olive oil, garlic, and chili flakes in a small bowl. Place chicken breasts in a zip-top bag, pour marinade over, and let it marinate for 30-60 minutes.
- Cook the chicken: Preheat the grill or skillet over medium heat. Remove chicken from the marinade and grill for 6-7 minutes on each side until cooked through. Let rest before slicing.
- Assemble the salad: In a large bowl, layer fresh greens and sliced grilled chicken. Add your choice of chopped vegetables, nuts, and herbs.
- Drizzle with additional honey and lime juice for added flavor. Toss gently to combine.
- Serve generously in bowls or on plates for an attractive presentation.
