- 1 cup fresh garlic cloves
- 1/2 teaspoon salt
- 1/4 cup neutral oil (canola or vegetable oil)
- 1 tablespoon lemon juice (optional)
Instructions
- Peel the garlic cloves by giving the flat side of your chef’s knife a gentle whack to remove the skins.
- Place the peeled cloves on a cutting board and sprinkle a little salt over them. Mash the garlic with the side of the knife until it forms a smooth paste.
- Transfer the mashed garlic into a bowl and gradually incorporate the neutral oil until you achieve the desired creamy consistency.
- If using, mix in the lemon juice to enhance flavor and preserve color.
- Store the garlic paste in an airtight container in the refrigerator for freshness.
