- 1 head romaine lettuce, chopped
- 2 boneless, skinless chicken breasts
- 2 cups homemade croutons
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup mayonnaise
- 2 anchovy fillets, minced
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Marinate the Chicken: In a bowl, mix together olive oil, minced garlic, lemon juice, Worcestershire sauce, pepper, and a pinch of salt. Add the chicken breasts, coating them thoroughly. Allow them to marinate for at least 30 minutes.
- Cook the Chicken: Heat a skillet over medium-high heat. Add a drizzle of olive oil, then place the marinated chicken in the skillet. Sear for approximately 6-7 minutes on each side, or until fully cooked and golden brown. Let it rest for a few minutes before slicing it into strips.
- Make the Croutons: Preheat your oven to 375°F (190°C). Toss cubed bread with olive oil, minced garlic, and a sprinkle of salt. Spread them on a baking sheet and bake for 10-15 minutes until golden and crisp.
- Prepare the Dressing: In a mixing bowl, combine mayonnaise, anchovy paste, Dijon mustard, minced garlic, lemon juice, olive oil, and grated Parmesan. Whisk until smooth.
- Assemble the Salad: In a large bowl, combine the chopped romaine, sliced chicken, croutons, and dressing. Toss well to coat everything evenly. Add more Parmesan on top for that extra touch.
- Serve: Plate the salad and garnish with a lemon wedge and a sprinkle of fresh cracked pepper. Enjoy!
