- 1 medium Butternut Squash
- 1 to 2 cups All-Purpose Flour
- 1 large Egg
- 1/4 teaspoon Nutmeg
- Salt to taste
- 4 tablespoons Butter
- Fresh Sage leaves
Instructions
- Prepare the Butternut Squash: Cut the squash in half, remove the seeds, and roast at 400°F (200°C) for 30-40 minutes until tender. Let cool and scoop the flesh into a bowl.
- Make the Dough: Mash the squash, then mix in flour, egg, nutmeg, and salt. Start with 1 cup of flour, adding more as needed to form a soft dough.
- Shape the Gnocchi: Roll the dough into ropes about ½ inch thick and cut into 1-inch pieces. Use a fork to create ridges if desired.
- Cook the Gnocchi: Boil salted water, add gnocchi in batches. Cook until they float (2-3 minutes) and remove with a slotted spoon.
- Prepare the Sauce: In a skillet, melt butter over medium heat, add sage leaves, and cook until butter is golden brown and aromatic (3-5 minutes).
- Combine: Toss the cooked gnocchi in the skillet with the sauce and serve immediately. Sprinkle with Parmesan if desired.
Notes
For gluten-free options, substitute flour with almond flour. For vegan options, use flaxseed eggs.
