A comforting and flavorful soup made with white beans, ham, and aromatic vegetables, perfect for family gatherings.
Ingredients

- 1 cup dried cannellini or great northern beans, soaked overnight
- 1 ham hock or 2 cups diced leftover ham
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 teaspoons fresh thyme
- 2 bay leaves
- 6–8 cups chicken broth
- Salt and pepper to taste
- 1 splash of lemon juice (optional)
Instructions
- Rinse and soak your dried beans in water overnight.
- In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Sauté until onions are translucent, about 5-7 minutes.
- Stir in ham hock or diced ham, thyme, and bay leaves.
- Add soaked beans and enough broth to cover all ingredients. Bring to a simmer.
- Simmer on low for 1.5 to 2 hours (or 30 minutes if using canned beans).
- Once beans are tender, remove the ham hock, shred meat, and return to pot. Adjust seasoning with salt and pepper, and finish with lemon juice.
- Ladle soup into bowls and serve warm.
Notes
For a vegetarian version, omit ham and add mushrooms for flavor.
